The Croquembouche

or croque-en-bouche is a 

French dessert consisting of choux pastry balls, also known as profiteroles, filled with vanilla creme patisserie and attached to a cone with crisp set sugar caramel.

Traditional Caramel or Belgium Chocolate versions are available.

A Croquembouche or croque-en-bouche is a French dessert consisting of choux pastry balls filled with vanilla creme patisserie and piled onto a cone and bound with threads of caramel. In Italy and France, it is often served at weddings 

and has proven a trendy choice in the UK for an unforgettable wedding/function centerpiece.

Due to the creme patisserie over time softening the choux bun and the caramel the croquembouche has to be delivered a maximum of 4 hours prior to eating to ensure its stability and profiteroles not going soggy. We create our towers with a 

poly cone remaining Inside to assure stability and to give the client a longer display time. The cone will not be visible, however, but gives the client a longer display time. For chocolate versions, the display time can be up to 6 hours. 

A Traditional Caramel Croquembouche containing 200 profiteroles (Serves 50 to 70 guests with 3 to 4 profiteroles each. We can add various types of garnish including various nuts and nougatine, fresh strawberries, edible flowers, fresh flowers, and other elements.
